Description
The durum for this flour is grown biodynamically by Italian growers from Piedmont to Sicily. For years, the farming family has opted for fixed grain varieties. This grain crop naturally has good resistance to diseases and pests and can produce fertile seed on its own. After the harvest, a small portion of the grain is kept aside as seed for the next growing season, which allows the farmer to remain independent year after year. The rest goes to the Spielberger Mill, where the millers grind. Tasty, wholesome and vital flour from close to nature. Durum flour is very finely ground durum wheat. That is a large, hard wheat grain. This flour contains a high gluten content and therefore binds very well.
