Description
Roasted pearl couscous, or better: “Fregola tostada” can be used in the same way as the non-roasted version. In Sardinia, however, fregola tostada is usually found as the basis of the most delicious “risottos.” And you can find them in all kinds of flavors: with lentils and pancetta, with peas and mint, with sausage and chili or – very traditional and irresistibly yummy – with tomatoes, sage and Sardinian sheep cheese! Because fregola tostada is roasted, the pasta remains deliciously al dente even when it cooks a little longer!
