Buckwheat groats are cracked, coarsely ground buckwheat seeds and therefore ready in 5 minutes. You traditionally use them for making porridge (with buttermilk and syrup!) but also for baking cookies and making a surprising tapenade! And what do you think of buckwheat groats croquettes? Buckwheat seeds are the fruits of a shrub. Buckwheat is therefore not a grain, but since time immemorial it has fulfilled its function in many dishes. Buckwheat probably originated around 6000 years ago, in ancient China and the southeastern region of the Himalayas. Buckwheat has actually only been a crop grown in Europe for 700 years. It had a 100-year popular period and was then mercilessly dethroned by the potato. Nowadays you can only find (large-scale) buckwheat cultivation in Russia and China. Buckwheat, unlike grains, provides the amino acid “lysine,” which you need for the growth and maintenance of your body. The amino acid composition of buckwheat is so favorable that its value is almost as favorable as that of the best animal proteins (such as milk and meat protein). In addition to the fact that the protein yield of buckwheat is much higher than that of grains, buckwheat is rich in fiber, vitamins B1 and B6 and various minerals.
