The cows spend more time outdoors than average in a meadow full of grasses, clovers, herbs and flowers. This ensures the most delicious milk and therefore cheese. This young matured cheese has a maturation process of 8 weeks, which means that the cheese has developed more flavour, but is still wonderfully soft in structure. Subtly spicy and therefore perfectly balanced with a creamy flavour.
