Unpasteurized hatcho miso is a powerful seasoning from Japan that is traditionally made from fermented soybeans. It ferments for 2 years in 100-year-old cedar barrels, which makes it unique and very powerful in taste. The powerful umami flavor makes it a good alternative to the stock cube. Suitable as a base for (miso) soups, sauces and marinades and delicious on bread with peanut butter. It is the most powerful of the four miso types.
