Description
This quinoa comes from the Chimborazo province in Ecuador. The cooperative has several dozen communities of hundreds of farmers who grow quinoa and trade it through the cooperative. Quinoa has been grown as a food crop for thousands of years. It is sown in November – December and harvested from March to June, depending on the variety and the altitude of the farms. This quinoa has a nutty flavour and is an excellent substitute for rice, pasta or potatoes. Rinse the quinoa again before preparing it to eliminate a bitter taste. Use approximately 75 g per person and add twice as much water or stock. After 10 minutes of gentle cooking, let the quinoa stand covered for another 10 minutes.
