Description
Most capers are ripened in a mixture of vinegar and water. This gives the capers a fresh, sour taste and makes them relatively soft. You can use them in all sorts of savory dishes that could use a bit of ‘sourness’ and serve them straight from the jar with antipasti. Tip: sprinkle them over al dente cooked pasta with soaked raisins, mackerel and roasted pine nuts and finish with extra virgin olive oil! Capers are the flower buds of the Capparis Spinosa. If you let them grow and bloom, seed pods will form and we know these as caper apples.
