Description
Pearl barley is pearled barley. In other words: polished barley, the outer layer has been sanded off. Barley is, as it were, the whole grain variant of pearl barley. Pearl barley also goes by the name (pearl) groats. Traditional dishes with groats are buttermilk porridge and “watergruwel” of berry juice, cinnamon, currants, raisins and groats, pearl barley. These dishes may not sound very appealing but they definitely are, time for a groats revival we at Green Age think! And not only in sweet dishes. For example, you can also use pearl barley as a base for risotto, instead of rice and pasta, in soups and in sauces.
